Capitaine Canard's mission is to provide products prepared in a traditional and artisanal way, which are nowadays hard to find:  local, natural, non-industrial, without additives, and above all, we give time to what takes time.

 

Captain Canard prepares his delicacies in the Eastern Townships, near Brome Lake, where the fresh mountain air and wild fields produce the herbs and vegetables we use.  For meats, the captain turns to his neighbouring farmers, who raise their animals ethically, naturally and often with organic certifications.

 

In this idyllic landscape, time does its work in the cold rooms, the smoking chambers, the barrels, and the cellars.
